

One last thing to note – I am not a chef. I always create a conveyor which is a really great way to involve young children… they can each be responsible for an area of the conveyor! I keep a little bowl of water to the side as your hands will get sticky. This recipe works better if you get super organised. I always feel like I am winning at life when I open the freezer and find get ahead family meals in there… and these salmon nuggets get a big thumbs up from us! We are making these ones with oregano and lemon zest which is just delicious.

The flavour is in the crumb so you can even have a few flavours for different people (paprika, cajun or coriander & lime zest). These Salmon Nuggets are very versatile – you can swap out salmon for other fish and you can change the flavours to suit your family’s taste. It’s also a great way to get kids used to eating fish! The prep doesn’t take much more than 15 minutes when you get set up and into the swing of it. I don’t know why, because it’s not taxing, but it does work better if you are organised and weekends tend to be that time for me. If you’re anything like me, you will make this on a weekend. I always batch make a bunch of these for the freezer but I make extra so we can have some fresh on the day. We had been on holiday to Anglesey and we had done what we do on all our holidays -eat! Anywhere that had homemade fish fingers on the kids menu got our collective vote! I run out of the house most days with nothing more than a coffee in me.
